Easy Oven-Fried Chicken Breast

-ounce box plain Melba toast broken into -inch pieces tablespoons vegetable oil large egg white tablespoon Dijon mustard teaspoons fresh thyme leaves / teaspoon garlic powder / teaspoon cayenne pepper boneless skinless chicken breasts - grams each Salt and ground black pepper cooking spray

. Set an oven rack to upper-middle position and preheat the oven to F. Line a baking sheet with aluminum foil and place a rack on top. Pulse Melba toast in a food processor until coarse crumbs about -second pulses. Spread the crumbs in a shallow dish and mix with oil.

. Beat the eggs mustard thyme garlic powder cayenne pepper together in a separate shallow dish.

. Pat the chicken dry with paper towels and sprinkle with salt and pepper. Working with chicken breast at a time dip in egg mixture allowing excess to drop off. Coat with the Melba crumbs pressing gently so the crumbs hold. Place chicken on prepared grill and light coat edges with cooking spray.

. Bake until coating is golden and the thickest part of chicken registers to F on an instant-read thermometer about minutes. Serve immediately.
